Where to Start

The tenth Singapore selection, published in 2026, covers 307 establishments: three at three stars, nine at two, thirty-three at one, and ninety-seven Bib Gourmands.

  • Les Amis — three stars for a seventh consecutive year, and the classical French benchmark the rest of the city is measured against
  • Odette, National Gallery — also a seventh consecutive year at three stars, and freshly reworked: both the room and the menu were refreshed earlier this year
  • Zén — the third of the three, and the sibling of Frantzén in Stockholm, which also has a Dubai outpost we cover in the Dubai guide
  • Hill Street Tai Hwa Pork Noodle — the other end of the same list entirely. Bak chor mee cooked to order, and one of only twelve restaurants starred in every Singapore selection since 2016

One correction worth making, because most articles on this subject are years out of date: Hill Street Tai Hwa is now the only hawker stall in Singapore holding a star. Hawker Chan, the stall that made the idea famous in 2016, does not appear in the 2026 guide at all. The hawker tradition is still very much in the guide — it has simply moved into the Bib Gourmand tier, where ninety-seven entries now sit.
